Rolo Cake Mix Cookies

These cookies were introduced to me in college by my favorite group of sisters, the Robinsons. I had the pleasure of living with three of these sisters at different times, who made these cookies on the regular!
Fast forward a couple years & we were newly married & getting invited over to friends’ homes for dinners and asked to bring some sort of dessert. Well, I’m not afraid to admit that baking isn’t my strongest suit now, and definitely wasn’t back then. But I remembered these cookies & started bringing them. Everyone raved, and they were super easy, so I just kept with it and now I bring them to family & friend functions regularly! I keep Rolos & Devil’s Food cake mix stocked in my pantry so I always have the supplies to whip them up last minute!
This recipe only has five simple ingredients! A box of Devil’s Food cake mix, some oil, eggs, Rolos, and then powdered sugar for dusting over the top! The most time consuming part if unwrapping the Rolos, so I suggest buying the unwrapped Rolos, or enlisting your kids or partner to unwrap for you, or at least help out!
Combine the cake mix, oil, & eggs together until a dough forms. Then spray your hands with cooking spray or oil(so the dough doesn’t stick), and pull out about 1/5 Tbl of dough.
Roll the dough into a ball, then flatten between your hands and add a Rolo to the center. Then wrap the dough around the Rolo and roll into a ball again, making sure that the Rolo is completely covered in dough. Then place on a cookie sheet(either greased, or with parchment or a silicone baking mat), leaving a bit of room between them to spread. I get about 18 per sheet, but could probably cram more if needed.
Bake at 350ºF for 9 minutes & let them cool completely on the cookie sheet before moving to a cooling rack.
Dust the tops with powdered sugar & if there is caramel leaking out the bottom, dip it in powdered sugar so it’s not sticky anymore. Store in an airtight container on the counter. I think they’re even better the next day when they’ve cooled and are nice & chewy! This makes about 36 cookies, but trust me, you may want to double it if you’re bringing it to a potluck, they go fast!
