Vanilla Granola

My husband eats a bowl of yogurt with granola every single morning. I used to buy granola in bulk from our grocery store & thought nothing of it. Then one time we ran out and I wasn’t planning on going to the store for over a week, so I figured it couldn’t be too hard and made it from scratch! My husband then told me it was better than what I had been buying, so I’ve been making it every since!.
This is a simple granola recipe, but you can add any nuts or dried fruits that you want!
You start by mixing together quick oats, brown sugar, salt & cinnamon. This is when you can add any additional nuts, seeds, or dried fruit that you want!
Then in a glass measuring cup or microwave safe bowl, add your oil & honey. Microwave it for 30 seconds & then add your vanilla.
Pour it into your oat mixture and stir until it’s all coated.
Then spread it all on a sheet pan lined with parchment or a silicone baking sheet liner. Bake at 325ºF for 15 minutes. Then stir it and bake for another 10 minutes.
Let it cool completely on the pan, then break it up and store it in an airtight container! We go through so much that I usually double it and make two pans worth. We love it on yogurt or just snacking by the handful.
