This was one of the meals growing up that I loved! My mom would make a huge bowl of it and I would always have seconds, and even thirds. It’s that good!
Something I love about salads like this are how customizable they are! This is the way we love to eat it & what we put in it, but you can easily mix it up! My husband doesn’t love kidney beans, so sometimes I swap them out for clack beans. And sometimes I forget to pick up a bag of Doritos, so we use regular tortilla chips for that crunch on top!
The cilantro was something that my mom never did, but I had it on a taco salad at our small town Mexican restaurant one time & couldn’t believe how much flavor it added! So as long as I don’t forget to pick up a bunch at the grocery store, I always add it now!
Something great about this meal is that it’s fresh, but still filling with the meat & beans. It makes a perfect Summer dinner that’s simple to throw together & pleases everyone, but we eat it year round! If you have some picky eaters who may not like a thing or two in it, feel free to put all the toppings in individual bowls & serve it salad bar style! Then everyone gets to eat what they like, and there’s no complaining or short order cooking for you! Win win!
A short cut you can take is to cook a whole bunch of taco meat up, and then freeze it! Pull out what your family needs and leave the rest in the freezer for later! This recipe is a perfect way to use up that extra taco meat! I like to cook a few pounds up at a time & freeze it. It pull it out for last minute dinners when I’m running short on time. My go-tos are tacos, taco salad, taco soup, and nachos!
